From a mattress on the floor to a suite at the Marriott, Quito has a hotel to meet everyone's needs. The prices tend to be a little higher than in other parts of the country, but so is the overall quality.
There are some basic things to look for in a hotel in Quito. With cool evenings year-round, hot water and thick blankets are a necessity. Location is also important and will greatly impact the kind of experience you have. There is a good variety of hotels in every neighborhood, so if you want a non-touristy experience, it is worth it to venture out of the Mariscal area. If you are willing to spend a little more money on lodging, consider staying at one of the many Ecuadorian-run upscale hotels instead of an international chain like the Sheraton, Marriott or Hilton. They offer the same services and you get a better taste of Ecuador. Also, many hotels have rooms with beatiful views of the Pichincha volcanoes or city skylines at no extra charge, so it never hurts to ask.
Quito is a large city with much to see and do. Don't be surprised if you find yourself staying longer than anticipated. If you stay for more than a couple of days, ask for a discount on your room. Bargaining is always appropriate.
